<p>There are few things more&nbsp;decadent&nbsp;than Seared Scallops sitting on-top a bed of heavenly Risotto. Chocolate Cake may be the only heavyweight contender to beat this powerhouse of a meal.</p>
<p>This meal can be prepared in a fairly short amount of time. But that doesn't mean that you will have to compromise taste and presentation just for a little convenience. <p>At Chef 360 - we relish a good meal, and we love sharing recipes. Below, you will find the awesome, amazing, and yes - decadent Seared Scallops with Risotto recipe.&nbsp;</p>
<p>The trick with Seared Scallops is to make certain that the Scallops are very dry. You can use a towel to pat them dry before searing them. Also, if you have a desire to add more to your Risotto (like tomatoes, basil or cheese) do so.&nbsp;</p>
<p>

<strong></strong><strong>Risotto</strong></p>
<p>
Prep and cook time 60 minutes</p>
<p><em>Ingredients</em><br />
1 cup long grain rice<br />
30 fl oz chicken broth<br />
1 package shitake mushrooms, chopped<br />
1 vidalia onion<br />
1 clove garlic<br />
2 TBS Olive oil<br />
salt and pepper to taste<br />

Directions</em><br />
1. &nbsp;Saute onion and garlic in olive oil for about 5 minutes or until onions become translucent<br />
2. &nbsp;Warm chicken broth on stove<br />
3. &nbsp;Add uncooked rice to onion and garlic mixture. &nbsp;Allow rice to brown (approximately 5 minutes)<br />
4. &nbsp;After rice is brown, add 7 oz of chicken broth and allow to simmer until rice has absorbed chicken broth<br />
5. &nbsp;Add 1/2 of shitake mushrooms and 7 oz of chicken broth. &nbsp;Allow chicken broth to absorb<br />
6. &nbsp;Add remainder of mushrooms and 7 more oz of chicken broth. &nbsp;Allow to cook down<br />
7. &nbsp;Add remainder of chicken broth<br />
8. &nbsp;Risotto will become creamy, salt and pepper to taste</p>
<p><strong>Scallops</strong><br />
Prep and cook time 8 minutes</p>
<p><em>
Ingredients</em><br />
1 lb fresh sea scallops &nbsp;<br />
2 tsp of unsalted butter<br />
2 tsp olive oil<br />
Salt and Pepper<br />

Directions</em><br />
1. &nbsp;Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry (Chef's secret to scallops)!<br />
2. &nbsp;Saute oil and butter in pan and salt and pepper scallops<br />
3. &nbsp;When the pan begins to smoke, gently add the scallops (making sure they aren't touching each other)<br />
4. &nbsp;Sear scallops for a minute and a half on each side<br />
<br />
Scallops will have a golden crust and translucent center. &nbsp;Serve immediately over top of risotto. Enjoy!</p>]]></description><guid>http://www.chef360catering.com/scallops</guid></item></channel></rss>
